Well,it might be the similar position to Gintama anime > Gintama manga (on MAL) so I can kinda see the bigger yet cliche picture xD
Ye..but with only 1-cour to work with once again there's only so much they can do with it but I still think we might reach the manga ending in anime form at some point..like for Golden Kamuy.

hmm..from the recent stuff there's Kotarou wa Hitorigurashi and maybe Summertime Render once it gets more episodes since it might surpass the immersion the manga had.Not sure about how the others would taste to you but I'm vibing with sequels as usual..and Spy x Family if the CloverWorks made episodes hits more than WIT made then that's a plus but it's family friendly and the anime is going to maximalize that aspect despite the manga have some nutty stuff here and there.Just compare it to how Kingdom manga has all the beheading and body parts being separated and then anime that doesn't do that (like One Piece or BLEACH censorships..especially later on).
