I haven’t played personally but it’s been hard to understand the fandom without playing the games it seems! There’s a lot that seems to be missing context without engaging in the full lore.

im already on ep 24 of sign because I didn't know this order before, so should I go play infection before I watch episode 25 and then continue on from the list?

If you're concerned about spoilers and the originally intended experience I would do so!
I haven't watched sign in a while so I can't remember exactly what details are spoiled but I do know some events line up.
I believe the spoilers are a bit more egregious with GU and Roots if you intend to do the second season.
